"The quality of life of our pigs is of paramount importance to the quality of our
pork. We work closely with a family farm that produces our pigs, Pure Country Pork in
Ephrata, WA (www.purecountrypork.com). The farm is certified by the Food Alliance
(www.foodalliance.org) for meeting comprehensive standards for sustainable
agricultural and business practices.
• Because our program is geared towards prosciutto as the end product our pigs are
older and larger, averaging 280lbs hanging weight. They are a mixture of Berkshire,
Duroc, Landrace and Yorkshire Heritage breeds."
