Fresh ginger is immature ginger. We cannot grow ginger to maturity in our bioregion. This means we must harvest it immature, or fresh, which means that it has not yet developed a skin (and therefore requires no peeling :), and it has not yet developed fibers (and therefore can be grated easily, or even chopped or minced :). Fresh ginger is exceptionally juicy and delicious, but it also requires refrigeration and has a more limited shelf-life than mature ginger. Expect it to keep in your fridge for at least two weeks. It is best stored in a breathable bag, as opposed to a plastic bag. You can keep it long term in your freezer in a ziplock bag - simply take out and grate it as you need it, and stick right back in the freezer!
