This open-pollinated corn variety is called REBELLION, and for good reason! In order to create incompatibility with gmo-corn, good people bred landraces (local cultivars that have been improved by traditional agricultural methods) with popcorn. Popcorn has a smaller pollen than regular corn. With the crossbreeding this trait is incorporated, and that then means that if large gmo pollen lands on the silk of this variety, the gmo pollen is unable to "travel" down the silk.

BASIC COOKING RECOMMENDATIONS:
Whole corn can be ground into corn grits, meal, or flour if you have a home mill. Otherwise, whole, it is traditionally nixtamalized. The nixtamalization process might sound daunting if you do not know it, but it is an amazing human discovery worth looking into, and not very complicated at all. It is simply a matter of cooking the kernels in a woodash tea versus plain water. It is this process which allowed the native peoples to subsist on corn (without falling sick of pellagra), and the process by which corn tortillas are even possible (corn flour does not do it).
